Our macabeo is an impressive grape that arrived at our winery on Sept. 12, where the grapes were fermented and aged in stainless steel tanks. While we could have made it a monocepage, that doesn't fit the profile of our Sons line. Instead, we combined the grapes with our wood-aged chardonnay, which is also used for our beloved the Fat Lady Sings. The juice was aged in oak barrel for only 3-4 months, comparable to our The Fat Lady sings which will be released in September. The malolactic fermentation was quite late, due to the cold in our winery, so we were not able to bottle this aftertaste until May. Other than a small addition of sulfites - which we use to prevent the growth of unwanted microorganisms - and our organic wine yeast, this wine contains no other additives, just grape juice, in other words. We used a cellulose filter to filter the wine.
