Good wine has three ingredients: the best fruit from a special terroir, the know-how to make wine from the grapes and finally love and patience to mature the wine. We take care of the last two, but we depend on partners for the first. That’s why we work together with farmers who grow fruit according to our standards, caring for both people and land. In the future we hope to go further and form a cooperative that protects the farmer against economic downturns due to bad weather or illness, assuring us of working methods that cooperative with nature instead of crushing it.

The Cabernet Sauvignon, The Man With The Hat, is beautiful to be drunk now. This stubborn friend needed some time for the tannins to soften and allow the aromas to develop, but now tastes round and rich. On the palate, you’ll find notes of paprika, bayleaf and pepper. It pairs wonderfully with a nice piece of meat.

The Fat Lady Signs – Don’t let the name fool you. In her youth she was a chubby lass, perfumed with vanilla, but has since then she has grown up to be a slender beauty with fresh apple-cheeks and elegant acidity. It’ll swiftly despatch all your prejudices about ‘Oaked Chardonnay’.

How do we make our wine?

Together with the farmer we determine a number of factors : how to do the pruning, how to care for the land, how we guide the yeast cultures and when to harvest. Harvest timing determines the quantity of sugars and acids in the grapes, and thus also the wine. Once picked, we transport the grapes to Amsterdam in temperature controlled trucks. The fermentation process can start very slowly at this point, which is fine because we are sure that we only have perfect fruit on board. To encourage this, we play Beck, Wilco and The National in the cargo hold. Upon arrival, we make a final selection and de-stem a portion of the grapes. Fermentation then starts spontaneously. Once completed, the last aromas are pressed from the skins and then the wine matures for about 8 months in stainless steel tanks or French oak barrels. With the remnants of the grapes such as the skins and seeds, we make a beer with colleagues such as Oedipus, and an Eau de vie in collaboration with The Stillery. During the year we receive coaching from the winemakers of Alois Lageder in Süd-Tirol, and from the German flying winemaker Stefan Dorst. Furthermore, our tasting panel “Clique Chique”, consisting of well-known Amsterdam wine experts, provide us with feedback during the maturation of the wines.

When I asked when he was starting with the execution of his new plan, Joseph looked at me slightly annoyed and answered: "when conceptualising the new endeavour, it is then that it has started".

  • In 2017, we produced our first vintage of slightly less than 6,000 bottles, with fruit from 3 European countries.
  • In 2018, we produced approximately 15,000 bottles including only organic grapes from 4 European countries.
  • For the 2019 vintage, we plan to make around 40,000 bottles. We now have partnership contracts with farmers from 4 different European countries and we handle our own transportation.
