Chef Joey – highly valued member of the Chateau family, blowing us away year after year with his culinary masterpieces during Fête des Amis. After skipping culinary school, he gained experience at local Italian favourites Fa. Pekelhaaring and Toscanini, where his love for Italian cuisine originated. Because of his passion, one can often find him in Italy with his family, where he can’t stop talking about the local products and dishes. So seeing some of these dishes on our menu won’t be surprising.
Restaurant manager Cyril – former manager at Bacalar, a close friend of Joey, and lover of unique drinks. Given the latter, you will find plenty of cocktails, funky beers, ciders, and hybrids on the menu, next to our Chateau wines. Cyril has lived in Basque Country for a long time, where the locals showed him the true meaning of good living (and eating).
